Buoyant Boat Noodle Soup

Noodle soup is something that we don’t tend to make often, but we were looking for something new to make and this dish floated (no pun intended) into our minds. Noodle soup is a fairy straightforward dish to prepare and cook, so even if you’re not so confident in the kitchen, you should manage!

The recipe we followed can be found here. We cooked for three adults, so you can adjust your measurements accordingly. The ingredients we used for the noodle soup were;

•100g of rice noodles
•200g beef steak
•75g beansprouts
•2 spring onions
•Fresh coriander

And for the bouillon;

 •1 clove of garlic
•1 lemongrass stork
•3 stems of coriander
•1 liter of beef stock
•2 anise seeds
•2 tablespoons soja sauce
•0.5 tablespoons suiker
•2 tablespoons fish sauce
•Ground black pepper

The process to making the noodle soup is simple, start off by letting the rice noodles soak in room temperature water for an hour. While your noodles soak you can start with prepping the other ingredients. Garlic first, peel the clove and flatten it using the side of a knife. Get aggressive with the lemongrass by hitting it with the blunt end of you knife, this process bruises the innards and gets all the flavours activated. Add your beef stock along with the bouillon ingredients to a middle sized pan and let them simmer for half an hour.

While your bullion is simmering away, cut your steak into strips, not too thin, you’ll want to have a couple of decently sized pieces per bowl. Cut your spring onions into rings.

Once your bullion has been simmering for half an hour, run it through a sieve, and add the liquid back into the pan, bring it back to a simmer. Once your noodles are ready, add the beansprouts to the water with the noodles, run them through the sieve. Dip the sieve containing the noodles and beansprouts into the simmering bouillon for ten seconds. Then share the noodles out into your serving bowl or bowls.

Take your beef strips and add them to the sieve, dip the sieve containing the beef strips into the simmering bouillon for twenty seconds. The share the beef strips out into your serving bowl or bowls that already contain the noodles.

Once your bowls are filled with noodles and beef, take your bouillon off the heat and pour it into the serving bowl or bowls that you have set out.
