Perfect Pork

This dish is inspired on a Prague's recipe that is called Ranger’s pork, we found the recipe on 24 Kitchen website. This is a website we quite often use to get inspired, unfortunately it’s only available in Dutch so we translated it for you.

This is what you need:
•4 pork fillets
•2 onions
•125g smoked bacon blocks
•1 clove garlic
•500g mixed mushrooms
•7 g fresh thyme
•140 g tomato paste
•red wine

Start preparing the dish by chopping the onions, garlic and cut the mushrooms in quarters. On a high heat sear the pork fillets with some oil in a pan on both sides. Take them out of the pan and let them rest. Add the bacon, onions and garlic to the same pan, cook until all the fat is melted out of the bacon. Then add the mushrooms. After about three minutes you can add the tomato paste and thyme. Mix properly and cook on half medium heat for about two minutes. To finish off the dish you put the fillets back in the pan and add the wine until the pork fillets are just covered in it. Leave to simmer for about half an hour. We served the pork fillets with baked potatoes and sour cream with chives and a fresh salad.
