Wholesome Chicken Wraps

Possibly one of our favorite quick dinners to make. Wraps are a great base for a meal as you can generally make anything to go on them. So they never get boring, just changed up a few ingredients every time and you’ll have a variety of meals to make.
This recipe can easily feed a family of four.
For this version of wraps we went with the following ingredients;
•1 kg of chicken breasts (usually in cubes) but use whatever method you prefer
•1 whole pepper (you can chose which colour you prefer), we went with red
•Dice up a few carrots
•Half a courgette, usually into quarter discs
•2 onions
•1 clove of garlic
•1 tin tomato puré
•2 packets of Fajita Seasoning Mix (Two packets is normally enough, but you might more packets if cooking for more people)
•Olive oil
•Salsa (Homemade or shop bought)
•Crème fraîche
•Guacamole (Homemade or shop bought)
•Lettuce
•Tomatoes
Method;
Preheat a pan, add in olive oil, once the pan is warm, add in your onions and garlic. Once the onions are browned, add in chicken. Cook chicken until no longer pink on the outside, then add in your vegetables. Once your vegetables are fully cooked, add in the seasoning mix and mix around until all ingredients are coated. Let the pan simmer for a couple of minutes, if you would prefer a spicier dish, you can add some of your own spices.
Now is the time to prepare all the side dishes and your wraps, add your three side sauces to their own bowls, grate some cheese and if you wish, chop up some fresh lettuce and tomatoes as some extra toppings. Warm up your wraps in the microwave for half a minute or in a pre-warmed oven at 180 degrees celsius (356 fahrenheit) for 3 to 4 minutes.
